Eat-Clean Recipes

Tosca Reno is giving the rundown on how to have a healthy diet. Check out the five recipes that will have you eating clean!

Quinoa Pilaf

Ingredients:

1 tsp extra virgin olive oil
1 medium onion, peeled and chopped
2 cups red or white quinoa well rinsed and drained (quinoa has a bitter
coating that must be rinsed off before you cook it)
1 3/4 cups low sodium chicken or vegetable stock
1 tsp freshly grated lemon zest
1 small yellow zucchini, diced
2 tsp fresh cilantro, chopped
2 tsp fresh parsley, chopped
1 tsp fresh lemon juice
1 tsp fresh lime juice
sea salt, and freshly ground black pepper
4 scallions, trimmed and chopped for garnish

Preparation:

1. Place olive oil in a large skillet, and heat over medium heat. Add
onion and cook until translucent. Now add rinsed and drained quinoa and cook
for 5 minutes. The grains should become lightly browned. Toasting the quinoa
before cooking further develops the flavor of the grain. Add stock, lemon
zest and zucchini. Bring to a boil. Reduce heat and let cook, covered, for
20 minutes until quinoa becomes translucent.

2. Remove pan from the heat and let stand for 10 minutes. Fluff with a
fork and add cilantro, parsley and citrus juices. Season with sea salt and
pepper. Serve immediately. Garnish each serving with chopped scallion.

Paper-Wrapped Chicken

Ingredients:

4 12"x18" parchment sheets
2 cups arugula, torn
4 (4oz) skinless, boneless chicken breast halves
2 tsp fresh sage, chopped
2 tsp fresh rosemary, chopped
1 cup plum tomatoes, chopped
3/4 tsp sea salt, divided
1/2 tsp freshly ground black pepper, divided
4 tsp olive oil, best quality
4 tsp Kalamata olives, sliced and pitted (optional)
cooking spray

Preparation:

1. Preheat oven to 450 F. unfold parchment and coat lightly with cooking spray,
leaving a two inch border.

2. Place 1/2 cup arugula on one side of the parchment so it touches the fold but not the ungreased border.

3. Place the chicken breast over arugula; sprinkle with 1/2 tsp sage and 1/2 tsp
rosemary.

4. Top with 1/4 cup chopped plum tomato.

5. Sprinkle with one-fourth of the salt and black pepper, and drizzle with 1 tsp olive oil. Top with 1 tsp sliced olives if desired.

6. Fold paper; seal edges with narrow folds. repeat with the remaining parchment paper, chicken and other ingredients.

7. Place the packets on baking sheets. Bake for 20 minutes or until puffy and lightly browned.

8. To serve, open packets and transfer arugula and chicken breast to plates. Pour juices over top. You can also serve right out of packets; carefully transfer to plates and pierce each to allow steam to escape.

Protein: 27g
Fat: 7g
Carbohydrates: 2g


Eat-Clean Hummus

Ingredients:

4 cloves of garlic
2 cups canned chick peas, rinsed and well drained
1 tsp sea salt
1/3 cup tahini
Juice of 2 fresh lemons
1 tbsp extra virgin olive oil

Preparation:

1. Place all ingredients in a food processor. Pulse for a few minutes until
well combined but still coarse. Adjust seasonings.

2. Transfer to serving bowl and serve or cover with plastic wrap. Keeps well.

Nutritional value per 1-tbsp serving:

Calories: 35
Calories from fat: 15
Protein: 1g
Carbohydrates: 4g
Dietary Fiber: 0.7 g
Sugars: 0g
Fat: 1g
Sodium: 94mg

I am a type 1 diabetic and was diagnosed about 3 years ago. I have struggled with my diet since being diagnosed. Can you help me with easy, good tasting, foods? I love to eat. I am not really over weight but could stand to lose about 10 pounds in order to feel my best. I have been exercising 5-6 days per week about 40 minutes each day for the past month.
I would love to have any information available. Thank you.

The anti cancer diet is the other guy, not Tosca. Her book is called eat clean; she has a website too.

Type II diabetic here with the same issues….since I am young, I guess I thought only old people go blind or lose limbs, but then again, I never thought I would end up with Diabetes at 34. Now I am 38, and it is time I get serious. Thanks for the wakeup call. Oh, and this is my first time catching this show too…I hope they don’t cancel it and that they keep it going!

I just caught Lifechangers for the first time had not heard of it.. I am one of the few looking for work and have been only working part time. This was a great show. I am glad to see something with substance and not just chasing around taking pictures. somethintg that is worth while. Keep it up, I am not really intrested in all the junk about people that I don’t know!

My husband and I are both type 2 diabetics. We could really benifit from the cookbook that you offered. I think that the Suzanne Sommers segment was so very interesting; I wish that you spent more time talking about her bioidentical hormone theories- please have her on again for a longer segment ! thanks

Your stories were really told so fast. It was really hard for me to get the
info I needed for the free books.
I am 51 with really bad arthritis and
a diabetic. I live in the snowy state of Michigan winter wonderland, Since I
have been cooped up inside with out any
chance to go out doors. my flair ups are frequent and I dont want to take any
more drugs. please help.

I was watching tonight because there were serious medical stories about cancer.
Unfortunately, the guests were cut off in mid-sentence and the stories were too short.
I felt like I was watching an infomercial, not a serious show, so I turned to CNN.
Adults DO watch TV and we do have attention spans of more than 30 seconds.

Hi. My name is James and I, too, am a diabetic. My doctor told me that diabetics, in order to lose weight, need to exercise double the time regular people do due to the medication and how the disease effects the body in general. You must move more, in addition to eating healthier, in order to improve yourself enough to not need your medication or injections. Exercise, food, and medication create a stool for a diabetics life. If not enough of one, everything else is useless. In order to not to be able to take medication, you must exercise and eat healthy so that third leg, the medication, is not needed. Please check with your doctor before starting any exercise program. I find exercising throughout the day, versus at one lump sum is best. Park further from the store, walk within the shopping center verses driving around, etc. is what helps to do it for me.

I am a type 2 diabetic and I have not been able to get my life on track. I eat well enough not to get physically ill and avoid testing my blood sugar. I am looking for a simple cookbook that can get me started on a healthy lifestyle. I do not like things like hummus and eggplant. I am a great cook but I am not that adventurous. I am also not active and I need to jump start an exercise routine. I hate exercise, the gym and anything that has to do with physical activity. However, I know I have to get moving. I have a treadmill- maybe I could start there. I know I need a support system but I do not want to pay for a trainer. My son reminds me daily that I need to get healthy. I just want to feel better. I just turned 50 and I want to use that as a turning point for changing my life. I saw your show this morning and decided to make today the first day of the rest of my life! Help!

iam a diabetic iam not doing good i have been looking for a cook book and acook book foe cakes and all kind of recieps i dont have the moeny to buy one or more could u help me send me the books that idcan have so i can do better thanks cheryl adds chertl connolly 3625 virginia ave springfield ore 97478 thank hope u can help me.
